When salt is added to the ice bath (usually rock salt in ice cream making), it comes into contact with the thin layer of water on the surface of the melting ice. The salt dissolves and the water becomes salty. This salt water has a lower freezing point, so the temperature of the ice bath can get even colder, thus freezing the ice cream more quickly.

When heat is added to ice the ice turns to water, but stays at 32掳F until it's no longer ice. When salt is added to ice it melts so rapidly that it uses some of it's own thermal energy to turn itself into water. When the ice gives up it's thermal energy it becomes colder and the ice and salt water mix can be as cold as 14掳 - 15掳 F.

When salt is added to ice it lowers the melting point. In other words the ice begins melting at a temperature lower than 0°C. This is why salt is added to ice on the roads in the winter. It causes ice, that would have otherwise remained as a solid in sub-zero temperatures, to turn to water. Note that the temperature of the water has not changed.

The idea is to take advantage of the lower melting point. Ice forms when the temperature of water reaches 32 degrees Fahrenheit (0 degrees Celsius). When you add salt, that temperature drops: A 10-percent salt solution freezes at 20 F (-6 C), and...

$\begingroup$ The question was about why the temp would drop, not how salt melts ice, so the concluding "that is how salt melts ice" is misleading. but the text does add some explanation. However, it might be the reason why the other answer got more upvotes, as it more directly focussed on the temp decrease. $\endgroup$ – redfox05 Mar 12 '18 at 16:53

Several cold baths are used for certain applications, with the simplest being an ice bath. When preparing an ice bath, it is important to use a mixture of ice and water, as an ice-water slurry has better surface contact with a flask than ice alone. Sometimes salts are added to ice in order to create baths colder than \(0^\text{o} \text{C ...

SRM University-AP. The reaction of sodium borohydride and water is accelerated by an increase in temperature or by a decrease in pH, therefore the reaction is carried out in an ice bath at neutral...

Water and ice baths. A bath of ice and water will maintain a temperature 0 °C, since the melting point of water is 0 °C. However, adding a salt such as sodium chloride will lower the temperature through the property of freezing-point depression. Although the exact temperature can be hard to control, the weight ratio of salt to ice influences the temperature:

The salt prevents decomposition caused by enzymes present on cucumbers. It also prevents spoilage microorganisms from taking over and creating off-flavors and spoilage in the finished pickles.
