It's amazing what you can do with enough Italian to say; hello, goodbye, good evening, please, thank you & you're welcome. I'd add the ability to order a drink (coffee, wine, beer, water), read a menu (know the basics food names) and of course being able to find the facilities is always handy.

After they do so: Give students the dialogue and menu, and ask them to read through it carefully. Point out the use of "would like" for asking for and making requests. You may also want to make sure they notice the use of "here you are" instead of "please" when handing someone something.
